Green Shangri-La

"The Shangri-La is going organic.

The hotel and resort in Bonita Springs, which was a mystery to most of Southwest Florida up until a year ago, has received organic certification for its grounds, and the owners are seeking national organic certification for the restaurant to open in the main building.

If the owners — the Lama Hana trust led by Naples residents Heather Burch and Addison Fischer — are successful, the restaurant would be one of only three in the nation with U.S. Department of Agriculture certification. The other two are Restaurant Nora in Washington, D.C., and Ukiah Brewing in California.

“Things have been quiet, but there is still a lot going on behind the scenes,” said Tina Matte, Lama Hana spokeswoman."
